Before we dig into my breakfast dining review, I feel that I must disclose that I could eat breakfast food for every meal of the day for the rest of my life without any issues. I love breakfast, no matter what the time of day is. Breakfast for dinner has always been a thing for me – as a child and as an adult. I love brunch, too, because breakfast foods are included!
When I saw the menu for Cosmos Cafe & Market at Universal Stella Nova Resort, one of the first dishes that caught my eye was the Huevos Rancheros dish. The breakfast menu, like the lunch and dinner ones, is quite large, with plenty of sweet and savory plates, handheld breakfast sandwiches, bakery items, and sides.




Breakfast is served daily from 7 to 11 am, but you needed to place your order by 10:50 am during my stay, or you’d be out of luck. I’m not certain if it will always be this way, but it’s important to keep in mind, as lunch service doesn’t begin until 11:30 am. And if you’re anything like me, lunch food doesn’t cut it when you’re in the mood for breakfast.


The items shown on the Bakery list above are all available in the grab-and-go Market, so there is no need to worry about a timeframe for purchasing them. They are all beautifully displayed right at the counter.


Now, let’s talk about the Huevos Rancheros. I’ve had this dish at so many different restaurants, and it’s always different, but I almost always love it. Even the version we make at home is different from most restaurant versions. For $14, this dish includes two over-easy eggs, black beans, Cotija cheese, guacamole, potatoes, house-made pico de gallo, cilantro, and tostadas.

I love that you not only had crisp tostadas to dip into the salsa, guac, and beans, but those jo-jo-style potato wedges were incredible, with their crispy outside and soft, fluffy inside. And even though the beans and guacamole don’t say that they’re house-made on the menu, they sure tasted like they were. The guac even had some larger chunks of avocado in it, making it really feel as though it was just made table-side. The eggs were cooked just perfectly with runny yolks to eat the potatoes with. The portion size on this dish was also huge and came with so many potatoes – I barely ate half of it! I do want to mention that nothing here was spicy, which was just perfect for me; however, hot sauce is available if you like to spice things up.

This dish was phenomenal. If I hadn’t left before breakfast service began on check-out day, I surely would’ve ordered this to take with me to the airport, even though there were plenty of other breakfast dishes I wanted to try. I would definitely order this dish again if I happened to be visiting this hotel during breakfast hours!
